A Unique Experience - make your own cheese!
We love formaggi in Italy. We love it so much we use it for every part of the meal. We put in on a plate with fruit & jam, we put it on pizza & pasta, we even use it for our desserts like tiramisu & lemon-ricotta tarts.Â
During this class, you will learn to make your own cheese, which we’ll then incorporate into our pasta dishes & dessert.Â
The lesson will begin at the dairy farm, where we’ll say hello to the animals & visit the barn where you can learn about the wonderful variety of cheeses produced. After you’ve smelled all the cheese, we’ll take our fresh milk & bring it back to the castle kitchen to begin our own cheesemaking process.
When you’ve finished cooking, sit back and enjoy the spectacular view of the Tuscan vineyards. Our staff will serve you each dish paired with Brunello wines from the castle’s own vineyard.
Guided visit of the castle winery and stop in our vegetable garden or local shops to take the freshest ingredients, guided visit at the dairy farm and learn about cheesemaking.
Hands-on cooking class: guided step-by-step by our chefs, learn how to make pasta from scratch, shape different traditional Tuscan and Italian pastas and also how to make sauces like pestos. Two different pasta recipes will be made.
Food storytelling: with our chef, learn the secrets of local ingredients and the connections between recipes and Tuscan fascinating history and culture
Lunch with the dishes made during the class and other delicacies
Four-course menu: appetizers, one pasta dish with sauce, one meat course, dessert
Beverage: 4 Castello Tricerchi wines (as wine tasting) paired with the dishes, water
